Here is a general guide  - based on average portions.

Turkey - allow approximately 1.5 lbs (675 g per person). For turkeys under 14 lb allow approximately 2 lb (900 g) per portion as the bone to meat ratio is higher for smaller birds.

Goose - allow 2 lbs (900 g) per portion. The biggest geese are only about 11-12 lbs (approx 5.5 kg) so if you need to feed more than 6 people you will need 2 geese.

Chicken (whole, on the bone) - allow 1 lb (450 g) per portion.

Duck - allow 1 lb (450 g) portion.

Pheasant - 1 pheasant feeds 2 people.

Guinea Fowl - 1 guinea fowl feeds 4 people.

Ham, raw. Order 8 oz (225 g) per portion. This will give you 4 oz (110 g) of cooked ham per portion. Ham loses approximately 1/3 to 1/2 its weight in the boiling process, so if you need 2 kg of cooked meat, you should order 4 kg of raw ham.

Meat on the bone (e.g. Rib Roast) - allow 1 lb (450 g) per portion.

Meat, boned (e.g. Rump roast/Topside Roast/Boned Pork Loin) - allow 8 ounces (225 g) per portion.

Meat boned for casserole (e.g. venison casserole pieces) allow 4 oz (110 g) for a casserole with equal vegetable ingredients e.g. mushrooms, onions, carrots. If the casserole meat is just poached in wine, allow 8 oz (225 g) per portion.

This is a natural, additive-free, grain free grass fed beef burger, made from grass fed beef, minced twice, mixed with herbs and onion, no preservatives, then pressed.

These burgers have been made from un-aged beef, butchered and frozen within 3 days of slaughter to reduced histamine development. 

These burgers are made without grain or rusk,  just meat and herbs. As there is no rusk to bind them into a patty shape they are best cooked in the oven and will crumble when cooked.

Product images & weights

Please note your goods may vary slightly from the pictures on the website. . The images of the meat on our website are for illustrative purposes only. As meat is a natural product, each carcase we butcher is individual and even within the same breed carcases vary in size, overall weight, levels of fat cover, colour and marbling etc.  The product you receive may not look exactly like the image of the product on the website, as individual meat qualities e.g.level of subcutaneous fat, colour of muscle vary from animal to animal.

Although complete carcases vary in size the butcher will cut the meat cut as closely as he can to match the weight of the meat product sold. This means that, for example, a rib eye steak of 200 g  may vary in dimensions when cut from one beef carcase compared to that cut from another. The steaks from a smaller beast will be smaller but thicker, and those of a larger beast will be wider but thinner, but in both cases the steaks will weigh 200 g approximately, As our meat is cut by hand it may vary slightly in shape and appearance from batch to batch. The product packaging of our goods may vary from that shown on images on our website.

We cut  meat as accurately as possible, but as this is a natural product the weight of the product supplied may vary slightly from the weight ordered. It is impossible for the butcher to be absolutely precise when cutting meat and poultry weights and weights of poultry portions (e.g. chicken breasts) vary slightly from week to week depending on the exact age of the birds when killed.  Customers who have paid in advance online will not have to pay more if they are delivered or collect a heavier product than than purchased, but we will not make a refund if a product is less than 10% lighter than that prepaid online

Product may be fresh or frozen

All our meat products may be fresh or frozen, and this varies for each product on a daily basis.  Whether a product is sent out fresh or frozen will depend on the stock situation on the date of shipment and on the shelf life of the individual  product. Mixed boxes may consist of both fresh and frozen items.  When we pack your order for collection or delivery fresh items are in a bag marked 'fresh items' and frozen items are in a bag marked 'frozen items'.

Here is a guide to whether a product is likely to be chilled or frozen.

  • All Un-aged Quick-frozen products are butchered within 3 days of slaughter and frozen immediately. These products are always supplied frozen, never chilled, without exception. 
  • All sausages, burgers and mince are sold frozen.
  • Chicken is sold both chilled and frozen (products are marked frozen or chilled in the product title).
  • Roasts are generally sold frozen although that is not always the case e.g. whether a pork roast, a beef roast or a lamb roast is frozen will depend on whether we have killed pigs/cattle or lamb in the same week as your order is supplied - so, for example if we have just killed pigs in the week of your order  the pork will be chilled.
  • Steaks may be chilled or frozen depending on how popular they are. The more popular steaks (sirloin, rib-eye) are generally sold chilled, and other less popular steaks e.g. skirt steak are sold frozen.
  • Venison, wild boar and game birds are always frozen.
  • Turkey products are always frozen during the year (January to Mid December) because our turkeys are only killed once a year just before Christmas. 

If you do not want an item as a frozen product please put it into your basket as usual but put a note in the 'NOTES TO VENDOR' box on the checkout - just say 'NO FROZEN PRODUCTS PLEASE'.  When we prepare your order we will leave out of your order any items which are only in stock as frozen items on the day your order is shipped or collected and we will refund you for the items which we cannot supply as fresh items on that day.
